Spaghetti squash is such a fun way to try a new vegetable, and can be tried in so many ways! Here are two!
Ingredients: 1 Spaghetti Squash, 1/3 C marinara, 2 Tb shredded mozzarella, fresh
basil, 2 cups of fresh spinach, 1 garlic clove, 1.4 diced red onion, olive oil, and 2 Tb
parmesan.
To prepare: Spaghetti squash halved, scoop out seeds and bake in a shallow
dish with 1inch water at 350 for 30-40 minutes.
Sauté: red onion and garlic in olive oil and mix in spinach until slightly wilted – top
with parmesan – second version, mix 1/2 C diced tomatoes with olive oil and
garlic and top with shredded mozzarella and basil.
What Kids Can Help With:
“Forking” the spaghetti squash, measuring and adding toppings and mixing into
the squash. Older kids can help with cutting and sautéing.
